Attention: Picky Eaters

We all know we should be eating more vegetables and healthier foods, but why aren’t we doing it? Typically, I get the excuse that they don’t taste good. So how can we sneak healthy foods into different dishes?

  • Chickpea pasta:

    • Why it is good for you: High in fiber, which helps keep you full and satisfied. Also, high in protein and lower in carbohydrates, which will help repair the body and keep blood sugar regulated.

    • What to put it in: Substitute it out for regular pasta. Perhaps, you could add some finely chopped vegetables, zoodles (zucchini noodles), or pesto for extra nutrients!

  • Ghee:

    • Why it is good for you: Great source of Vitamin A, which supports thyroid, immune system, and eye health. Healthy source of fat and has a high smoke point, which means it doesn’t oxidize and create toxins in the body like other oils can.

    • What to put it in: Substitute it for butter or vegetable oils. Add it to a stir fry, dip your artichokes or crab in it when it is melted, or put it on your chickpea pasta (see above)!

  • Flax seeds:

    • Why they are good for you: High in fiber and omega-3, which promotes brain health, hormone balance, lubrication of joints, and reduces inflammation.

    • What to put them in: Add 1tbsp of fresh ground flax in smoothies, baked goods, cereal, and oatmeal. Bob’s Red Mill is the best kind!

      • Consider adding finely chopped zucchini or carrots to muffins! More veggies, yes!… :)

  • Spinach:

    • Why it is good for you: High in iron, which is great for your blood, immune system, thyroid health, and energy levels!

    • What to put it in: Add fresh or frozen in smoothies to thicken, just make sure to add blueberries too (which is also full of MANY nutrients) so the green color doesn’t freak them out. You can also have fun with it and make it a HULK smoothie.

      • That is the KEY, have fun in creating. If you have children and you are having fun; your children will see it and feel more motivated to eat it!

        • Blend up spinach in pancake or waffle batter for a fun green themed breakfast!

  • Cauliflower rice:

    • Why it is good for you: High in fiber, which helps with bowel movements, high in antioxidants + b vitamins, which promotes detox, reduces risk of cancer, and supports the body for longevity.

    • What to put it in: Add fresh or frozen in smoothies to thicken. You can mash it up like mashed potatoes, add the ghee too!

      • You can also mix it in with hamburger meat. Add some spinach, finely chopped mushrooms, or peppers to the hamburger meat too.
